Leo loves teaching people about coffee. He has developed a simple guide to making the perfect espresso.
"The process might look simple, but every step matters," he begins.
"First, you need to select the right coffee. The beans should be freshly roasted — ideally within the last two to three weeks. If they're too fresh, the flavour won't be fully developed."
"Next, grind the beans. The grind size is crucial. Too fine and the water won't flow through; too coarse and it'll pass too quickly. As a result, the balance of flavour is lost."
"Once the grind is correct, dose and tamp the coffee. This means measuring the right amount — about eighteen grams — and pressing it firmly into the portafilter."
"After that, lock the portafilter into the machine and start the extraction. A proper espresso should take between twenty-five and thirty seconds to pour."
"Finally, and this is the most important step — taste it. Then taste it again. The flavour should be balanced: slightly sweet, slightly bitter, with a thick crema on top."
"What if it doesn't taste right?" asked Ana.
"Then you adjust. The process is always a conversation between you and the machine. Therefore, you never stop learning."

Of course! First, pull a double espresso — two shots, 25–30 seconds.
Then what?
Next, steam your milk. You want a microfoam — silky, not bubbly.
What's the difference? Why does it matter?
Because microfoam integrates with the espresso. As a result, you get that creamy texture.
And then?
Pour the milk slowly. Finally, taste it. If it's not right, adjust the ratio.
